Winter melon is a vegetable that can be used as both medicine and food, and has many health benefits. According to traditional Chinese medicine, winter melon is sweet, light, and cool in nature. It enters the lungs, large intestine, small intestine, and bladder meridians; it has the effects of moistening the lungs and producing fluid, resolving phlegm and quenching thirst, promoting diuresis and reducing swelling, clearing away heat and removing summer heat, and detoxifying and draining pus; it can be used to treat summer heat thirst, phlegm heat cough and asthma, edema, athlete's foot, fullness, diabetes, acne, facial spots, rectal prolapse, hemorrhoids, etc., and can also detoxify fish and wine.

Winter melon soup ingredients

Ingredients: winter melon, egg white, salt, broth or water, and water starch.

Winter melon soup steps/method

1. Peel the leftover winter melon and cut it into small pieces. Beat the egg white;

2. Blanch the winter melon cubes in boiling water until they are translucent and cooked, then remove and immerse in cold water;

3. After cooling, use a food processor to make winter melon puree;

4. Add broth (if not available, add water) to the pot and pour in the winter melon puree, bring to a boil and skim off the foam;

5. Add salt to season, pour in a little water starch to thicken, and finally pour in egg white and bring to a boil. You can also add some sesame oil when drinking, but it is still very delicious even without it.
